The development of Champagne
Dom Pérignon champagne was born in the Abbey of Saint Pierre d'Hautvillers, France. The spiritual father of the Dom Pérignon brand, the monk Dom Pierre Pérignon, spent 47 years of his life at the Abbey investigating the techniques used to make champagne and perfecting them. The Benedictine abbey overlooks the beautiful rolling hills of the Marne Valley, an area of the Champagne region which is known for its wonderful champagne terrior. It was here that the original Dom Pérignon set himself the mission to create the finest champagne in the world through careful experimentation and development of new techniques.
Dom Pérignon developed some of the earliest champagne-making techniques
The original Dom Pérignon was a monk who lived from 1638 to 1715, and had a passionate interest in winemaking will lead him to create champagne. He was the first to use winemaking techniques such as blending grape varieties, which he worked on while developing champagne. Dom Pérignon also developed champagne-making techniques like a method for keeping grapes skin away from the juices they produced when pressed, so that clear white champagnes could be produced from dark grapes.
Another Dom Pérignon champagne invention – better champagne bottles
Dom Pérignon also developed the first corks for sealing bottles of wine, which had previously been done using wood. The cork created a better seal, which was particularly important for preserving the tiny bubbles in champagne. In addition, Dom Pérignon thickened the glass bottles which champagne was transported in, which helped to protect the delicate cargo and stop them from breaking or exploding. In the early days of champagne-making, there were problems of bottles exploding due to the gases inside! Luckily, Dom Pérignon's adjustments to the bottles fixed this.
Dom Pérignon was the first cuvée champagne in the world
A cuvée champagne is one which has been specially blended, or where the champagne has been chosen from a vat which is of superior quality. Dom Pérignon was the first prestige cuvée, following the legacy of Dom Pérignon who was famed for the quality of his blends. The ability to taste different champagne vintages and to know how best to blend them in order to bring out their flavours is a finely honed skill, which is what Dom Pérignon was so talented at.
