Citadelle Gin is the rebirth of traditional gin distillation
Citadelle Gin is inspired by the founding fathers of French gin production: Carpeau and Stival. The two Frenchmen were entrusted by Louis XVI with the task of opening a distillery at the Citadelle in Dunkirk. This then became the royal distillery and was in the King's favour for 20 years. The distillery had 12 copper pot stills and was a pioneer for the French gin industry. Sadly gin starting being mass-produced in the late 20th century and quick, cheap brands flooded the market. This development inspired Alexandre Gabriel to distil a hand-crafted gin using the traditional method from two centuries before. Gabriel spent several years performing research in Flanders; searching through old files and tirelessly developing his distillation plan. Citadelle Gin is produced in the same style of the spirit from the 18th Century. Now produced in the South-West of France, Citadelle Gin is still distilled in copper pot stills with a naked flame, sticking to tradition. Citadelle Gin is essentially the rebirth of a complex spirit and is available for purchase from our online shop.
Citadelle is officially a London gin, though the spirit's production is a little more complex than you might think. The spirit is produced in Charentais pot stills which can hold up to 25 hectolitres. Citadelle is also unique in that naked flamed distillation is used, meaning there is no steam. 18 botanicals, as well as juniper berries, go into every bottle of Citadelle Gin. Not included in the spirit is added sugar, making Citadelle Gin a pure drink which does not need sweeteners to hide its taste.
Naked flame distillation, that's the Citadelle Gin way
Because Citadelle Gin is made using an open flame, the distiller has maxium control. With such control, the distiller can create a caramelisation, giving the spirit a unique texture which feels amazing in your mouth. Naked flame distillation requires a lot of care and attention because the spirit is 'cut' very precisely. 'Cutting' is when the spirit vapour is seperated into three parts - the 'head', 'heart', and 'tails'. The 'heart' is the best part of the spirit and is used to make Citadelle Gin. Distillation using an open flame also means that the spirit is made in small batches, making Citadelle Gin a rather hard-to-find spirit and something very special indeed.
The spirit is made with a long list of botanicals. Juniper is the standard ingredient in gin, with the exception of a few more experimental brands. All of the botanicals in this spirit are the best around and the juniper berries just so happen to come from Croatia. As Citadelle Gin is distilled seasonally, the juniper berries are always fresh. Along with the juniper, other luxurious botanicals, such as cinammon, nutmeg, and genepi. Genepi is a small plant found at high altitudes, often in the French and Italian Alps. Genepi, along with nutmeg, cinammon, and other botanicals, beautifully complement the juniper and make this spirit delcious and elegant.
