Nuestra Soledad La Compañía Ejutla is a fruity mezcal which has subtle flavours of roasted peppers and subtle salinity with a light mineral layer, and is made from 100% Espadín agave from the district of Ejutla, Mexico. The mezcal is produced using the traditional process of pit-roasting, open fermentation, and double-distillation, by family team Gregorio and Gonzalo Hernandez in La Compañía Ejutla, Oaxaca. The small village is at an elevation of around 5,000 feet, which makes it perfect for growing the altitude-loving agave plants used in mezcal.
Mezcals vary between different villages in the Oaxaca region, due to differences in water, soil, wood, and the preferences of the Maestro Metcalero. So Nuestra Soledad presents single village mezcals which showcase the very best of the distinctive flavours. The La Compañía Ejutla is sweet without being cloying, and has notes of smoke and savoury. It's ideal for cocktails, or chilled as an aperitif, and it even goes well with food - try pairing it with fish or seafood.
