There are merely five Mexican states that are allowed to produce certified mezcal - Oaxaca, Durango, Zacatecas, Guerrero und San Luis Potosí. The first of this list is the residence of the brand Mezcal San Cosme, whose spirit of the same name has managed to capture our hearts. The company was named after the Saints Cosmas and Damian, who are the Patron Saints of doctors.
The piñas used for Mezcal San Cosme are roasted for four days using traditional stone ovens. After that, they are crushed using a millstone, which is dragged by either a horse, a donkey or a mule. As you can see, there is a very orthodox and traditional approach to the making of this mezcal. The brand uses a centuries-old manufacturing process, which is one of the secret weapons that makes this spirit so great. After the piñas have been processed, they are left alone to ferment for a total of two days and then distilled with a copper still.
The mezcal's scent gives off vibrant notes of caramel, wood and soil, while its flavour consists of roasted agaves and leather. The drinking experience is topped off by a pleasant and warm finish.
