Chivas is one of the most iconic whisky producers in the world. Its roots go back to the year 1801, when the brothers James and John Chivas founded a groceries trading firm. The enterprise grew quickly, establishing a stellar reputation, and in 1843 Chivas Brothers Ltd was made an official supplier ? 'purveyor' of course ? to the royal court of Queen Victoria. Having begun to blend whisky at around the same time, the firm was soon spreading around the world. When the phylloxera plague in the late 19th century destroyed most of the vineyards in France and brandy and wine consumers turned to whisky, Chivas was there. The folly of prohibition in the USA in the twenties made the country off-limits for a few years, but Chivas' whisky was back on the American market in 1938. Nowadays Chivas Regal is a global icon, and one of the most recognisable brands of scotch whisky anywhere across the globe.
The making of Chivas Regal Whisky
The production of Chivas whisky begins with the malting of barley, whereby the grain is soaked in water to instigate germination and then dried over fire to halt it. Often dried over burning peat, scotch whisky is known for its varying degree of 'peatiness'. After the following mashing process, the beer-like liquid that results goes into distillation. At Chivas' distillery in the Scottish town of Keith, master distiller Colin Scott oversees the whisky's time in the copper pot stills. After distillation, the whisky is placed in oak casks for aging. Every whisky that wants to call itself scotch has to have been in an oak barrel in Scotland for at least three years prior to bottling ? Chivas' whisky is all aged for a minimum of twelve years. After the whisky has been aged, Chivas' Colin Scott takes care of the blending, a process he likens to the composition of a symphony ? identifying and harmonising the various aromas and characteristics of each whisky to produce a balanced and rounded whole.
